Arroz Con Leche Recipe In Honor of #HispanicHeritageMonth

As you may know September 15 through October 15 is National Hispanic heritage month. This is the time to celebrate the anniversary of the independence of Latin America countries. During this time I like to honor our Hispanic culture with crafts and recipes that I can share with my family so they can always embrace our culture.




Now that it is fall and the hotter days are behind us, I like to make a yummy Spanish rice pudding also known as Arroz Con Leche. This is a delicious dish that the kids will love and it is super easy to make. It is served warm after dinner or you can even enjoy it cold as a refreshing snack. Arroz Con Leche is one of the world's favorite desserts. 

Arroz Con Leche Recipe



Prep Time: 5 min
Total Time: 50 min. 
Serves 8


Ingredients:

  • 1 cup medium grain rice 
  • 4 cups whole milk
  • 2 cinnamon sticks
  • 1/4 tsp. salt
  • 1 tsp. freshly grated lemon or orange zest
  • 1 tsp. vanilla extract
  • 3/4 cup sweetened condensed milk 
  • ground cinnamon (optional) 


Directions:

(1) Add 2 cups of water to a heavy saucepan over medium-high heat. Bring water to boil. Stir in rice and salt. Return water to a boil. Reduce heat to low. (2) Cook, covered until water is absorbed and rice is tender which is about 20 mins.




(3) Stir in whole milk, lemon/orange zest, and cinnamon sticks. Increase heat to med-high; bring milk to boil. (4) Reduce heat to low. Cook, uncovered, stirring occasionally to prevent sticking. Keep stirring until mixture is creamy and thick, about 25 mins. Stir in vanilla and condensed milk. Cook, stirring often, until the flavor is absorbed which is about 5 mins. 



Pour rice pudding into serving bowl; can be served warm or chilled (we prefer it warm). Sprinkle with cinnamon before serving, if desired. Provecho!!
